Paleo Strudel (nut-free)

I used canned cherries in water from Aldi for the cherry filling and corn starch and turbinado sugar.

For the crust I substituted tapioca flour from Bob's Red Mill and it gave a good texture. 

  • Dough:
  • butter - 1/2 cup, cold
  • tapioca flour - 1 cup*
  • salt - 1/2 teaspoon
  • egg - 1
  • turbinado sugar - 2 tablespoons
  • Topping:
  • 1 egg white - beaten
  • 1 tablespoon turbinado sugar crystals
